Seasoning: To give the bean burritos just the right amount of flavor, mix together chili powder, paprika, cumin, salt, garlic powder, and onion powder. Use 1 tablespoon of prepared or store-bought taco seasoning as an alternative.
Rice: Although it is entirely optional, adding cooked rice to bean burritos does help give them more substance. If I have any leftover Instant Pot Jasmine or Instant Pot Brown rice, I love to add it to the filling. Another alternative is to add leftover seasoned rice, like Instant Pot Spanish Rice. Just keep in mind that since the Spanish Rice is already well-seasoned, you won’t need to add salsa to the filling mixture.

- You want the edges to be separate, so just fold the tortilla’s sides inwards by 1 to 2 inches over the contents.
- Wrap the tortilla tightly as you roll it over the inside.

Ingredients
- 2 cups cooked rice
- 4 (10-inch) large tortillas
- 2 tablespoons fresh coriander, chopped
- 2 tablespoons vegetable oil
- 1/2 medium onion, diced
- 2 limes, juiced
- 3 to 4 cloves of garlic, chopped
- 1 tablespoon of chili powder
- 1 (15-ounce) can black beans, drained
- 1/2 teaspoon ground cumin
- 1 tablespoon hot sauce
- ⅔ teaspoon of salt, to taste, optional
Instructions
- Assemble the ingredients.
- Combine the cooked rice with the fresh cilantro, cut it up, and pour lime juice over the mixture in a large microwave-safe bowl.
- Give it a short toss after heating in the microwave or on the stove until hot.
- In a separate large pan, sauté onion in vegetable oil or olive oil for 5 minutes or until onion is soft. Add the garlic and cook for another minute.
- Stirring continuously, reduce the heat to medium-low, add the black beans or pinto beans, and season with cumin, chili powder, and spicy sauce.
- You shouldn't need much salt because of the other ingredients, but it's okay to add more if you like.
- Allow the beans to simmer for 5 minutes, or until well cooked.
